A polysaccharide (name is derived from the bacteria Xanthomonas campestris used during the fermentation process)
Commonly added to food as a thickener and stabilizer to prevent ingredients from separating (e.g. in salad dressing and sauces)
Form/size:     Powder – different particle (mesh) sizes
